About  one month ago Taaza Fresh a new Middle East quality food company had offered me the posibility to help them out in the final plating process and the decoration for the new plates and future comercial line.

Yesterday I realized how lucky I am to do what I love. As soon as I arrived to meet the chefs just the smell of the spices envolved me. I was sure that the rest would be a memorable experience. Afshan and Najma had everything ready. Each pot that they opened was a cult for my brain and my stomach. The flavor slowly started to get through my nose and all differents spices and textures popped out like popcorns in my brain.

I perfectly understood how a well done home made cuisine is always successfull and more if the chefs are mother and daugther.

All ingredients and recipies had a store, the ground beef is not ground beef; it is the finest part of the skirt perfectly cooked “ just melt in your mouth”. The Achar chicken has his own tale; men like the breast, women mostly the rest of the pieces with the bone; it is not regular chicken that you buy in a regular store; my butcher picked them up for me and I was sure that they were fresh and were the same size.

Another plate that amazed me was the Kadai beef stew. It reminded me of the oxtail reduced stew that my grandmother used to prepare when I was a kid with a few differences. It melted in your mouth but the ginger gave it the fresh touch that the spices remind you where was a piece of bread…………… there were 2 different kind of doughs one was pre elaborate and kind of  “Pita” and the other one was “incredible” Porota Bread; they buy the dough in Houston and the process to finísh it teaches you how good things are always elaborate; it was like pastry flour puff “tortilla” with perfect layerss and fine taste of bread “ not joking”.

We just spent a couple of hours fnishing the plates and getting the right pictures after that we just ate like the tradition says with our hands and enjoyed for another hour.  I refused to have a tea but I accepted some seeds that came straight from Dubai. I was not sure what it was but I intrduced them in my mouth and the sensation was like eating the Eden garden; cardomon; star anis; sesame; sweet coriander. I have never imagined before chewing and slicing that in my mouth but I felt fresh and clean.

Thank you so much for this experience. Chefs I will always remenber this experience.
